• Rice = (Gohan)
• common main meal consists of Rice, Miso shiru (miso soup), Okazu (sidedish)
• Rice was cultivated in japan 4000years ago
• Rice can be grown anywhere in japan (north to south)
• 8.8million tones of rice produced in japan every year
• 770,000 tonnes of foreign rice imported from other countries (only imported because of trading law requirements)
• In the Edo period tax was paid in rice
• Different names of rice: Kome (uncooked rice), Gohan (cooked rice, meal), Raisu (Western rice)
• Miso = fermented soybeans paste mixed with malt
• Side-dishes include: fish (sokana), tofu (toofu), vegetable (Yasai)
• Japanese people didn’t eat beef and pork until 1867-1912 due to two reasons: 1) little land to raise cattle on
• 2) Buddhism restricts the eating of certain animals

• Sashimi (luxury) Raw-fish
• Sushi: Nigiri-zushi (holding-hand-shaped sushi

• Table Manners
• Before eating Japanese say “Itadakimasu”
• When finished the meals they say “Gochisosama”
• When drinking, Japanese pour the drinks for the other people not themselves
• When taking food from a shared bowl use the opposite end of the chopsticks
• Bad Manners:
• Don’t pass food from chopsticks to shopsticks
• Don’t stand chopsticks on rice
• Don’t skewer the food with the chopsticks
• Don’t stick chopsticks in your mouth without any food.
